Many Indian dishes are traditionally cooked in very simply equipped kitchens. Very little special equipment is required, and most of the cooking techniques are pretty foolproof.

Indian cuisine is also an excellent entertaining cuisine. It's easy to scale up recipes to large quantities for more guests, and it's to add a dish or two. If some of the guests are vegetarian, it's easy to make sure there are enough dishes they can eat.

One of the best Indian dishes I cook is chicken and chillies. Get some fresh long chillies, both red and green. Cut them lengthwise in half, or maybe quarters, depending on their size. Fry them, and then add ginger, garlic, and chicken (maybe some other spice? I'd have to check the recipe), and when the chicken is cooked, take off the heat, and stir in some tomato (cherry tomatoes work well, but regular tomato cut into pieces works too) and fresh coriander.

I have a family friend that is personally giving me homemade vegetarian Indian food. Indian food is one of the few vegetarian meals I look forward to eating. Forreal my death row meal would just straight up curry.

Love it. Brit here who spend some time in South India (Karnataka mostly) and I fell in love with the cuisine, especially the spices and vibrant flavours, Masala Dosa is my go-to meal. British Indian restaurants are very different (with a few outstanding exceptions in each city of course).

I love it. Growing up anyone who made Indian food just thought loading something up with hot spices was Indian food. When I went on a UN mission to Africa we stayed on a camp run by Germans but the kitchen was run by Indians so there were usually a couple authentic Indian dishes to choose from for lunch and supper. They were mostly vegetarian but I'd often pick them if I was not keen on the meat option.

In terms of generalized national cuisines, Indian is my least favorite. Apart from a few dishes, I avoid it entirely.

Indian food is like Chinese food in that the range of quality is insane. Most of the time I'll hear someone say Indian food is bad, then list off a local throw together buffet cheap restaurant or the food court one that does 5$ specials at the end of day.
