You're basically asking "why do Chinese restaurants in America serve food that Americans are more likely to buy?"

It’s also the same in Asian countries. You can get Japanese-style Italian food in Japan and Taiwan more easily than authentic Italian. And Japan has Japanese-style Chinese.
Incidentally, there used to be an American-style Chinese restaurant in Shanghai called Fortune Cookie. It was pretty good.

I always assumed if I got stuck in a foreign land as an American I could at least make people hamburgers bc they seem pretty universal. Except maybe India.

There are many hamburger places in East Asia, some owned by Americans.
However, they do not have Cincinnati chili and it’s pretty hard to find great bagels. Real American pit barbecue (eg Carolina or KC) is on the rise but it’s still not that widespread. I personally also feel that ice cream could be better (like old-timey creamy ice cream, not creative flavors or gelato). Chicago-style pizza is underdeveloped. Just some ideas for your venture.

Most places have some version of "slow cooking meat outdoors" so I could see how American style barbecue could gain traction in a lot of places.
The international success of KFC is genius because chickens are a pretty universal constant wherever you find humans. Chicken is acceptable under virtually all cultural dietary restrictions and they're very cheap to raise pretty much everywhere. They're also very useful for controlling insect populations.

One of the very best meals I ever had was at a KFC in London in 1983. I can’t explain it, just better!

Oh that's very interesting! Do people eat much fried chicken American style? lol I'm the rural US and we don't have many asian food options really but people love it. It's pretty standard old school Chinese buffets or sushi but with options. But Vietnamese style Pho has become more popular and some Japanese Ramen restaurants. Being from the south we mostly eat pork or beef here. So a lot of BBQ!

-Do people eat much fried chicken American style?
Fried chicken is super popular in many parts of Asia, particularly Korea, Japan, and China.

I’ve been told that Korean fried chicken developed as a dish because of the large number of Black American soldiers that were stationed there. It’s a fusion of culture and cuisine. I don’t have any sources to corroborate this, but it seems plausible.

I really do not believe this story. It just seems to reflect a stereotype of black people that is very prent in Asia. I think it’s feasible that the modern dish was partially inspired by American fried chicken though.

It sounds kind of like the story my dad told me of carbonara originating when GIs asked the Italians for bacon & eggs.

Wikipedia says it was a Korean who studied in the US in the 1970s who introduced fried chicken as it is now so kinda? I can imagine with all the US soldiers in Korea that would certainly help boost initial sales and/or interest.

I’m in Taiwan where fried chicken is very important. There are several styles including xiansuji.
https://en.wikipedia.org/wiki/Taiwanese_fried_chicken
Of course fried chicken, of a different style, is also popular in Korea and you can easily find Korean fried chicken in Japan and Taiwan too. If you haven’t had Korean Fried Chicken, you can find a place in the US.
Then there is KFC which is everywhere (you may have heard about KFC for Christmas in Japan, which has spread to other parts of Asia). There is also Popeyes in Japan but not in Taiwan.

Oddly enough, I live on a very rural island in the northern US and all we have are Chinese and Mexican restaurants. They're not very good, but for some reason that's all we have!
